ナータン→のっぺり顔のこと。タイ人は白い肌に憧れがあり、宮廷料理=見た目も重視なのでライスチップはできるだけ「白く平らに!」
ライスチップにココナツミルクベースのディップソースを付けていただきます。。
ココナツミルクにタマリンドーが入るのでフルーティーな甘酸っぱさが加わり
ニンニクの風味も利いてちょっと想像つかない味かもしれませんが、
タイ料理の味の4つの要素「甘い、酸っぱい、辛い、しょっぱい」が
さりげなく感じられるソースです。
ディップソースにはチリオイルが少々かけられているのですが、
またこのチリオイルで味がUP!味がしまります。
