ココナツミルクベースにバイ・トゥーイ（パンダンリーフ）の風味を付けたアイスクリーム。（なのでちょっと緑色。）
なんとも言えない甘い香りのバイ・トゥーイ、ココナツミルクとって合うんだなぁ～。
それこそ20年前のタイの空港に降りるとバイ・トゥーイの匂いがモワ～ンと漂っていて、「お～ぅ、タイに来た！」って感じでした。
メータータクシーなど無い、それこそ中古の底が抜けそうなボロボロタクシーが走っていた頃、タクシーの後部座席のうしろに芳香剤代わり？にトゥーイの葉の束が
無造作に置いてあったり･･･。
私にとってバイ・トゥーイの香りはとても懐かしさを感じるタイの香りです。
お教室で作るアイスクリームはちょっと違います。
トルコアイスのように粘り気が少々あるジェラートに近いさっぱりとした
アイスクリームです。
